AI Bobby is a pioneering solution in the food protein space, leveraging generative AI to revolutionize food protein innovation. Challenge

Replacing animal proteins with alternatives requires replicating their complex functionalities, especially in achieving desired textures and flavors. This is a significant challenge due to the intricate nature of protein structures and the need to analyze vast amounts of data. AI Bobby needed a solution to effectively extract, structure, and analyze this data to accelerate progress in alternative protein development. 

Solutions Delivered

Zazmic, in collaboration with Google, developed a solution with two key components:

  • Literature Extraction Model: Leveraging Document AI and Vertex AI, this model extracts and structures relevant data from scientific literature.    
  • Performance Prediction Model: This model accurately predicts protein properties, enabling faster development of alternative proteins.   

Both models feature API endpoints for seamless access and integration into AI Bobby’s platform. 

Outcomes

The project exceeded initial expectations, achieving:

  • High accuracy: Model accuracy exceeded 0.96.    
  • Strong F1 score: The F1 score, measuring the proportion of true positive predictions on gelation (the initial target functionality), surpassed 0.97.   

These metrics confirm the model’s effectiveness and its readiness for operational deployment, planned for 2025.
